As a Mom, I feel like I’m constantly trying to find nutritious and tasty snacks that my kids will actually eat and enjoy. This is a favourite recipe in my house and a wholesome alternative to store bought loaves filled with unhealthy fats and sugar. And the bonus is that the kids think it is a “treat” (it actually is that good!).
Prep – 5 minutes
Recipe – 10 minutes
Bake time – 1 hour
Dry:
2 cups spelt flour
1/2 cup coconut sugar
1 teaspoon baking soda
½ teaspoon sea salt
1 teaspoon cinnamon
½ cup of non-sweetened shredded coconut
Wet:
¾ cup of soft coconut oil
3 large ripe bananas
2 large eggs
1 cup of grated carrots (works out to be about 1 large carrot)
Kitchen utensils
1 or 2-cup measuring cup
1 teaspoon
½ teaspoon
wooden mixing spoon
masher
grater
large and small mixing bowl
one standard sized loaf pan
1. Preheat oven to 350 degrees
2. Mix the dry ingredients in the larger bowl, set aside
3. Place bananas in smaller bowl and mash
4. Add oil and eggs to bananas and mix together
5. Add wet ingredients to dry and mix well
6. Fold in grated carrots
7. Grease loaf pan with coconut oil
8. Pour batter into pan and cook for about 55-60 minutes, until a toothpick inserted into centre comes out clean
Allow to cool in pan for 15 minutes before transferring to a wire rack.
